Pretty much everyone who tried the amazing cheese dip at the Saturday night BBQ asked Elaine for the recipe, and she was kind enough to send it along:
2 8oz packages of cream cheese
2 C Italian blend cheese
2 C shredded mozzerella
2 C mayo
4 cloves minced garlic
1/4 C chopped onion
3/4 C Parmesan cheese (save out 1/4 C for the top)
7 oz chopped sundried tomatoes, drained
2/3 C diced roasted red peppers, drained
Mix all, heat at 350 degrees for about 20 min. in a greased 9 x 13 pan.
This recipe makes a large portion and could easily be cut in half.

2nd Annual Tar Beach Golf Invitational
The 2nd Annual Tar Beach Golf Invitational (July 23 - 25, Schuylkill Haven, PA) was held this past weekend and proved that what was once an intital event will now be a yearly tradition. Despite the 100 degree temperatures and the drippinig humidity, everyone had an incredible weekend full of visiting, laughter, music, and a few golf course tantrums.

Winning Team - Bill Miller, Dave Campos, & Ned Allis
Favors - Engraved glass wine stoppers
Babies in Attendance - Rafael Campos (15 months), Charlotte Berry (11 months), Jackson Fargione (17 months). And a few more are in the planning stages...

Cash or Credit?
In making out your packing lists for this weekend, be sure to leave that wad of cash on your dresser and pack the credit card. Schuylkill Country Club, with the exception of pro shop merchandise, accepts only debit or credit cards, not cash.
This would include the 2 $55 greens and cart fees for the weekend, dinner on Friday, and lunch on Sunday. In regards to meals, they have agreed to do all separate checks to avoid any complicated math 3 scotches into your evening.
And if cash is your preferred method, don't fret. Host extraordinaire, Bill Miller, has offered for any meals and greens fees to be charged to his account and settled with cash at the end of the weekend.
Bill also reports that the course is in excellent condition and that he has bribed the local weatherman to ensure a sunny and rain-free weekend.

About the Club
This year's host, Bill Miller, was able to give us some great insights about the site for this year's Invitational, the Schuylkill Country Club.
Attire - "The club is very informal with only two minor requirements: No jeans, and no short shorts or cut-offs. Pretty simple. For the Friday night dinner, if the guys want to impress the gals with a jacket and no tie, that would be great, but if you want to scrap the jacket, that's fine too."
Course Layout - "SCC is a Donald Ross designed course, dating back to 1921. If any of you watched the AT&T tournament from Aronimink several weeks ago, you will see a very similar Ross design on a smaller scale. The greens are basically upside-down saucers surrounded by closely shaved chipping areas. My advice to anyone playing the course is to keep the ball below the hole on every shot."
Area History - "If anyone is familiar with John O'Hara's books (From the Terrace, Appointment in Samarra, Ten North Frederick), you will find it interesting that they were written about people from this area, where he grew up, and many of the events took place right at SCC and the Pottsville Club."

Year 2 - Logistics
Hotel InfoRooms are being held at the Microtel Inn and Suites in Hamburg, PA under the name Elaine Miller. Simply tell them that you are taking one of the rooms in her block and hand over your credit card! There are one or two suites in the block for the couples traveling with children.
